Cassuto enterprises and activities:
Brandrood kaas Welkom bij Brandrood kaas. De geschiedenis van een koe, een kaas en hun boer. Het Brandrode Rund is een echte oud-Hollandse koe. Op het landgoed Kernhem te Ede houdt Michiel Cassuto sinds 2008 deze prachtige dieren. Michiel: Alle melk wordt verkaast tot “Brandrood”. Dit is een harde kaassoort met een gewicht van 11 – 18kg., minimaal 6 maanden onder speciale omstandigheden gerijpt. Het was van jongs af aan een grote wens om koeien te melken. Na een opleiding aan de Hogere Landbouw School te Dronten, was het door de invoering van het melkquotum ondoenlijk om hiermee te beginnen. Een alternatief was geiten melken. Na 23 jaar met veel plezier geiten houden en kaas maken, heb ik in 2007 toch besloten om de omschakeling naar koeien te realiseren. Brandrode koeien zijn echte, pure koeien, kenmerken die ook van toepassing zijn op de kaas. Een oorspronkelijke kaas met een natuurlijke, gewassen korst en een uitgesproken smaak. Zacht nootachtig met een stevige nasmaak. Iedere zaterdag van 10.00 tot 16.00 uur is de boerderij geopend voor bezoek en kunt U kaas kopen.
